A3824: Culimprov: Cooking Without Recipes in Splash! 2010 (Nov. 20 - 21, 2010)
Ever wonder how the Iron Chefs like Mario Batali devise such elegant "recipes" off the top of their heads? Or how some chefs can just put together a complete dinner with a very limited number ingredients? They all share a secret which all great chefs know: "don't use a recipe!" Cooking is an Art, not a Science. It requires a great deal of creativity, not precise measurement. It also requires an in-depth knowledge of the basic building blocks of the culinary arts. In this class, you will learn how to cook without a recipe by exercising your creative minds and learning about the foundations of cooking. By the end of the class, you will be able to put the two together and open a new door of culinary freedom. Check this out: http://mcqueen.mit.edu/splash
